Overview

Hello! I am Hiroyuki Dobashi, your local tour guide, residing right here in Wakayama. Shoyu (Soy Sauce) is not just a condiment; it is the symbol of Japanese food culture that introduced the concept of "UMAMI" to the world. The sacred land where this magnificent seasoning was first created is none other than Yuasa Town in Wakayama Prefecture. In this town, the sweet and savory, nostalgic aroma continues to drift from the historic, active soy sauce breweries. This tour is not just simple sightseeing; it is a deep dive into the historical culture of the Kishu region and the very origins of UMAMI. Let’s explore the roots of this globally praised Japanese flavor together! The core of this tour is the townscape designated as a National Important Preservation District for Groups of Traditional Buildings. You will be captivated by the nostalgic beauty of the streets, lined with black wooden walls and wooden lattice windows, making it feel as though you have slipped back into the Edo Period. Experience the historical buildings deeply marked by the culture of soy sauce production. Our journey to experience Yuasa’s history starts at the nostalgic Former Yuasa Station Building. We will visit Tateishi Chaya, a traditional rest house and gathering spot, and contemplate local life while touring Jinsenji Temple, a quiet, ancient temple and the retro Jinburo, Former Yuasa Town Public Bath. Next, we delve into the heart of the soy sauce culture. We will tour Kadocho Shoyu Craftsman’s Brewery, a well-established brewery founded 180 years ago, and enjoy the scenery of Daisenbori Canal, which was vital for shipping goods. We will then stop by the Kitamachi Fureai Gallery to experience local culture, followed by a look at Okasho, a historical building that was part of a kimono shop and housed a liquor store for three generations. We will then view the Former Suhara Family Residence, building where soy sauce brewing took place, the home of a wealthy merchant. Finally, we will visit Yuasa Shoyu Co. Ltd. Factory, a facility that preserves tradition while evolving, for tasting and souvenir shopping, concluding our walk through the town. When you walk through Yuasa, the scent of soy sauce drifts in from somewhere. That is the proof that this town is still alive. Join me, Hiroyuki Dobashi and let's explore the rich and delicious charm of Yuasa together!

The birthplace of soy sauce was not what I expected. The smell from the active breweries and the historic buildings created an authentic experience.

Hiroyuki's passion for his hometown shows. Learning about shoyu's connection to miso and the monks who started it all was fascinating.

Great off the beaten path experience. The traditional preservation district felt like stepping back in time. Worth the trip from Osaka.

Really interesting food history tour. The umami explanations and the old buildings along the canal made for a memorable afternoon.
